Edit Ingredients4 cups (1 pound) elbow macaroni5 tablespoons unsalted butter4 cups milk1/2 medium onion, stuck with 1 clove4 cloves garlic1 bay leaf3 sprigs fresh thyme1 teaspoon dry mustard2 cups grated Cheddar, plus 1 cup in big chunks1/2 cup grated Parmesan1/2 cup grated MozzarellaKosher salt and freshly ground black pepper

If you want a more wholesome macaroni bake, use whole grain pasta and organic dairy products.

Recipe 11Cook the macaroni.

2Drain and toss it with 2 tablespoons butter.

3Preheat the oven to 350 degrees F (176 degrees C).

4Add milk into a saucepan with clove studded onion, garlic, bay leaf, thyme, and mustard.

5Warm over medium low heat until the milk starts to steam, about 10 minutes.

6Remove from the heat and let sit. The flavors will mingle and infuse.

7Add 2 tablespoons butter and the flour into pot over medium heat. Cook and stir 2 to 3 minutes but don't let it color.

8Strain the milk onto the roux. Keep whisking to avoid lumps.

9Cook until the sauce is thick. Stir often. This should take about 5 minutes.

10Remove from the heat.

11Stir in half the grated cheddar, half the Parmesan, and half the mozzarella. The cheese should melt into a smooth consistency.

12Add salt and pepper to taste.

13Pour the mixture over the macaroni and add chunks of cheddar, and mix everything together.

14Spoon everything into the a baking dish that's coated with 1 tablespoon of butter.

15Sprinkle the remaining cheeses on top.

16Bake until the top is golden and crusty. This might take 25 to 30 minutes.

Recipe 21Boil water with 2 teaspoons of salt and 2 tablespoons of butter in large pot.

2Add 1 lb. of elbow macaroni and stir frequently to prevent sticking.

3Cook until almost done.

4Drain through a strainer.

5Stir in 1 pound of shredded Colby jack cheese, 1/2 lb. of shredded sharp cheddar cheese, 4 tablespoons of salted butter and 3 cups of whole milk.

6Stir thoroughly.

7Place mixture into a greased (with butter) corning ware or Pyrex dish.

8Top with 1 cup of shredded sharp cheddar cheese and bake uncovered in oven at 400 degrees for forty minutes.

9Remove from oven and let sit to set for at least thirty minutes.

10Serve and enjoy!
